Today, in our little corner of the world, kids go back to school. Summer has officially ended. The holidaymakers are shutting up their houses, the beaches are becoming quieter, there is a chill by 8:00 pm, and their is a distinct smell of fall.
Back home in Newfoundland, this was always my favourite time of year. The leaves were changing, the air was crisp, and there was a smell of fresh chopped wood and partridge berries in the air. Home. Now, here in Spain fall still comes with a change, but a different change. One that over the years I have come to appreciate and even love. For me, fall mostly means more cooking. So, I will be sliding over the barbecue soon in exchange for the oven. So, stick around folks for lots of warming food in the months to come.
In the meantime, here is a menu to make life easy sliding into the middle, yes the middle, of September.
Monday Starting off the week with this super easy and healthy Veggie & Soy Bean Sprout Stir Fry. To the table in under 30 minutes. Serve with a side of rice and you are done. You just can't get any better than that!
Tuesday Another dinner that is on the table in 30 minutes! This Honey Glazed Chicken & Carrots goes great with a side of mashed or roasted potatoes. Keeping it simple and easy.
Wednesday What could be better than a creamy pasta dish for your mid week dinner? Well, if that is what your are looking for, this Creamy Shrimp & Spinach Spaghetti might do you just fine. If I have to stress anything about the flavour from this dish, it comes from the greatness of the shrimp. Don't and I repeat don't use the pre shelled cooked frozen kind. You will have a disappointing dinner on your hands. The frozen kind are great as long as they are raw and unshelled. Otherwise you are just adding frozen water to your dinner!!!!
Thursday Like I said last week.we are starting to get back into soup season. I am starting to think of new soup ideas for the fall. In the meantime this good ol' classic Potato & Leek Soup is a good staple that is hearty and good on the budget as well. Serve with some bread and you are all set.
Friday Yay for the end of another work, school or whatever week! Heading into the weekend with these 30 minute Beef Burritos. Great served alongside the Mexican Rice Bowls for a more complete dinner.
Saturday This Tomato & Zucchini Oven Baked Pasta makes for a great dinner on a Saturday. You can make it in the morning and keep it in the fridge until it's time to pop in the oven for dinner time. Easy! As well, I used my Marinara Sauce in this recipe. That is something I usually have on hand and canned to make life easy. The sauce is a time consuming step if you are making it from scratch for this recipe. If you are not into making your own sauces, your favourite store bought one would work just fine.
Sunday Family dinner time for us and I love dishes like this Atun Encebollado (Stewed Tuna in Onions) for Sunday. This is great with any roasted vegetables or even Country Fries. This tastes much better after it has been sitting for a few hours and then slowly reheated. So, make it early on then heat it up at dinner time. Keeps you away from the stove when it's dinner time as well.
Dessert Let's not forget the dessert. I made this Chocolate Self Saucing Pudding Cake again last week for the billionth time and boy is it just DIVINE! If you have never made it, go on try it and you won't be disappointed. A childhood favourite for sure.
