I have not made nor eaten fried rice of any type in years and years. And I have no idea why. Yesterday evening, while aimlessly walking around the kitchen wondering what to do with the turkey fillets on the counter, this came to mind. I remembered having fried rice often while growing up and I always loved it. All kinds. There was one Oriental restaurant in our town and it was called The Oriental. It has changed hands many times since the early 80s, but their fried rice is still delicious. When visiting a few years ago, we went for supper one night and it was a good as I remembered it as a kid.
This fried rice is my take on my memories from 30 years ago. Saying 30 years ago, makes me feel ancient, but at least I can remember things!!
Turkey Fried Rice
For the turkey:
4 turkey fillets
2 Tablespoons of olive oil, divided
Juice of one lemon
3 Garlic cloves, crushed
For the rice:
1 Cup/200 grams of wild rice, uncooked
2 Cups/480 ml of water
3 Spring onions, finely sliced cross ways
1 Carrot, diced small
1/2 Cup of green peas, defrosted
2 Tablespoons of sesame oil
2 Garlic cloves, crushed
1/4 Cup/60 ml of soy sauce
First give the turkey a quick marinade. In a shallow dish, add 1 tablespoon of the olive oil, lemon juice, garlic and salt. Stir and add the turkey. Leave for about 15 minutes at room temperature before cooking.
Meanwhile, bring the water to a boil and add the rice. Reduce heat to a low-medium, cover and leave to cook for about 20 minutes. When cooked, remove from heat and fluff the rice with a fork. Set aside.
In a large skillet set over high heat, add the extra tablespoon of olive oil and the turkey fillets. Cook each side for about 5 minutes. Remove from heat and transfer to a chopping board. Slice the turkey into very fine slices and set aside.
In a wok set over high heat, add the sesame oil, garlic, spring onions and carrots. Toss and cook over high heat for about 8 minutes until the vegetables are tender. Push the vegetables to the side of the wok and add the eggs. With a wooden spoon, continue stirring the eggs and start incorporating them into the vegetables. You want the eggs completely cooked and scrambled into the vegetables. This may take up to 2-3 minutes. Toss in the rice and stir around for about 3-4 minutes until all the rice had a good fry. Add the soy sauce and continue to sir for a minute or so. Add the sliced turkey and the green peas and mix into the rice. Serve straight away. You can add more soy sauce on the side if you like.
