This is really just pita bread bruschetta. And I LOVE all types of bruschetta.
These are simple little things that are put together in no time at all and make for great quick lunches or as a side to accompany other dishes. We love them!
Tomato Topped Toasted Pita Bread
Makes 2 Pita Bread Slices
I Pita bread
I Large tomato, diced
1/2 Small onion, diced
2 Garlic cloves, crushed
2-3 tablespoons of fresh mozzarella, grated
1 Tablespoon olive oil
Fresh ground black pepper
Small bunch of fresh chopped basil
Preheat your oven to 375 degrees F, set it in grill mode and place the rack on the highest setting.
Combine the tomato, onion, garlic, olive oil, salt, pepper and basil (reserving a small amount for garnish) in a medium bowl and stir to combine.
With a sharp knife, slice open the pita bread and put it in the toaster and toast it. Remove it from the toaster and place it on a clean surface. Evenly spoon over the tomato mixture, top with fresh mozzarella and a little fresh basil. Put in the oven for about 5 minutes or until the cheese is melted. Remove and serve immediately.
Like I said a wonderful quick lunch!
