Goes with summer and everything to do with summer.
It's nearing the end of August, but the barbecue sill has some life left it it yet. I honestly thought last week I was done with summer, the beach, the crowds, the HEAT, barbecues, and every single little thing to do with summer. But.....I have had a renaissance today and I am feeling it again! So, it's not quite time for winter roasts and hot chocolate yet!
Summer Grilled Mix Vegetables
2 Red peppers, cut into thick slices
1 Large Zucchini, cut into 2 cm pieces
1 Good bunch of think asparagus, ends trimmed
3-4 Tablespoons of olive oil
1 Teaspoon of rosemary
In a small bowl, combine the olive oil, rosemary and salt. Stir to combine.
Lay the vegetables out on a large baking tray and brush them with the olive oil.
Have ready a hot barbecue and place all of the vegetables over direct heat. Cook until charred and slightly soft. Probably about 8 minutes per side. Remove from heat and serve with your favourite barbecue dishes.
