Sometimes you want to make a dip, but are struggling with time and imagination. That happens to me a lot. I had this once upon a time and was impressed with how incredibly simply and tasty it was. It has turned out to be one of my go to easy dips over the years.
Really, one of my favourite easy dips. Is a recipe? Well, I don't know too sure about that, but it is a dip. You can put this together in about a minute. Maybe even less. I love it as a side to Indian or spicy foods. It also goes great with flat breads and such. You can dip just about anything in it! It seriously doesn't get a whole lot easier than this.
Minted Yoghurt Dip
Makes 1 cup serving
2 Pots of 125 ml Greek Yoghurt
Juice of 1/2 lemon
Small bunch of fresh mint, finely chopped (reserving a little for garnish)
Fresh ground black pepper
Combine all ingredients and stir well to combine. Sprinkle over reserved mint for garnish. Enjoy it with so many dishes, but especially love it with the Moroccan Spiced Pan _Seared Tuna Steaks.
