Monday Made these little Spiced Salmon & Red Pepper Cakes with Minted Yoghurt Dip last week and they are really lovely. You could roast some veggies for the side or just serve it with a salad.
Tuesday This is an easy dinner to come home to and put together. Done in under 30 minutes, so what could be better than that. Serve this Coconut Creamed Carrot and Ginger Soup with your favourite crusty bread.
Wednesday Lasagna is a classic staple food that just never ever gets old. I love this particular Roasted Zucchini & Cherry Tomato Lasagna. They don't take too long to put together and are really something to look forward to and the end of the day.
Thursday Making it to the end of the week with this Creamy Chicken Masala. If you marinade the chicken before hand, it makes for an easier dinner plus more flavoursome chicken.
Friday Comfort food to finish off the week. Caramelized Onion Stove Top Pork. Serve this with mashed potatoes and peas and you are all set.
