Earlier today I got it into my head to make granola. I hardly ever make it and was reminded when around to a friends place earlier this week. She had made some and it was really nice. So, granola it was going to be. I even went out and bought some raw almonds and oats as there were none on hand in the house. Got back to put it all together. Which took all of 2 minutes. Popped it in the oven and went outside to get the laundry. About an hour later I rememberd the oven and the granola! Can you say burnt to a crisp. I probably should have taken a photo...ha! Next time I will pay more attention. So, granola coming soon just not today.
Instead, I have this light and refreshing cod fish. My son requested fish for dinner, so fish it was. Cod was on for a good price today at the fish counter, so that solved the choices. I didn't have a whole lot of time for dinner this evening, and this took no time at all. We served it with mashed potatoes and asparagus. Great easy food!
Served below with the sautéed asparagus. Great light food.
Still using those lemons from the tree. They are slowly dwindling, but I imagine we will still have them by summer.
Lemon Crusted Baked Cod
4 Cod fillets, about 3 inches wide each and skin removed
1 Cup/90 grams bread crumbs
Juice from one lemon
Zest from one lemon
3 Tablespoons butter
2 Garlic cloves, crushed
1 Teaspoon dried oregano
Small bunch of fresh chopped parsley
1/2 Teaspoon sea salt
Fresh ground black pepper
Preheat oven to 350 degrees F. Place the cod fillets in an oven proof dish and set aside.
In a small skillet set over low heat, melt the butter and add the garlic. Cook for about 2 minutes until the garlic is sizzling. Remove from heat. In a large bowl, combine the bread crumbs, lemon zest, dried oregano, parsley, salt, pepper and garlic butter. Give a good stir until it is combined.
Squeeze the lemon juice over the cod fillets and top each fillet with the bread crumb mixture. Bake for about 20 minutes until the cod is cooked through and the topping is golden brown and crispy. Remove from oven and serve immediately.
