A Fruit Cocktail is a great way to great a day or end a meal. This on made with strawberries, kiwis, pineapple and mandarins is so fresh and light and perfect for any occasion.

What better way to end a light meal, than with this flavourful fruit cocktail.  I love fruit salads in the summer at any time of day as they are quite fresh.  This is nice served as pictured above or in little cocktail glasses topped with green yogurt for more of a dessert presentation (pictured below)

Just a little note that any fruits can be used in these cocktails.  These just happened to be the ones I had at home when making this salad.  Play around with the flavours you like best! And if you’re looking for inspiration, mangoes, grapes, passion fruit and any kind of berries would be a great addition.

What We Need To Make The Fruit Cocktail

  • Strawberries
  • Kwis
  • Pineapples
  • Mandarins
  • Orange juice
  • Greek yogurt
  • Mint leaves

Fruit Cocktail

A fresh and delicious fruit cocktail!

Ingredients

  • 12 large strawberries sliced
  • 4 kiwis peeled and cut into small pieces
  • 2 rings pineapple peeled, cored an cut into bite size pieces
  • 4 mandarins peeled, sectioned and each section cut in half
  • Juice of 4 oranges
  • 1 Cup Greek yogurt for serving
  • Mint leaves to garnish

Instructions

  • In a large bowl, mix together all the fruit with the juice. stir so all the fruit gets soaked in the juice. Cover and refrigerate for a few hours.
  • Arrange 6 cocktail cups and spoon enough salad to cover the bottom of the dish. On top of this layer, put a small spoon of yogurt. Repeat layers until you reach the top. You will most likely only get two layers. Top each cocktail with a little yogurt an finish of with a mint lea
