Looking for a quick and fresh salad today? We just served this with lunch and it really is a great combination of flavours. Make sure you use a really ripe mango for best flavour.
Fresh Mango and Walnut Salad
4 cups/150 grams of baby leaf salad leaves
1/2 Ripe mango, cut into slices
1/4 cup of roughly chopped walnuts
For the vinaigrette
2 tablespoons olive oil
2 tablespoons vinegar
1 tablespoon honey
1 teaspoon mustard
Salt and pepper
First, make the vinaigrette by combining all the ingredients in a small jar and shake well to combine.
Put the salad leaves in a large salad bowl, arrange mango slices on top and toss over walnuts. When ready to serve, drizzle over the vinaigrette.
