If you don't already make your own salad dressings, why not start today! This dressing is put together in under 10 minutes with some very basic ingredients. It is so good, it will make you skip the salad dressing isle the next time you are picking up groceries.
Summer really is winding down and I know lots of us are starting to think about packed lunches, quick dinners and busy days ahead. I am kind of on the same path, but still getting a little bit out of the dying days of summer.
We are just back from a last minute camping trip down the coast to say our adios to summer 2017. Despite the gale force winds, flesh melting humidity and zillions of mosquitoes, a great time was had by all! Great by definition meaning I might not be returning, EVER.
I love camping really. Or maybe I love the idea of camping. I can't quite decide which is more true. Over these past years, 17 to be exact, I have spent my fair share of time in tents across this great country of Spain as well as Portugal and France. Mostly pleasant with some amusing stories along the way. What would we have to say if it all went according to plan. Everyone's camping trips consist of road side breakdowns, hitch hikers and torrential rain, right?
All jokes aside, it's good fun at the end of the day and the kids will have lot of memories to look back on in years to come. Or not.
One of the things I love about camping is eating. Yes, chowing down on great food in the great outdoors is something that can't be beaten. Food somehow tastes better cooked outside. I am not sure if it's the fact that I am hungrier because of nature's elements. Or maybe more appreciative because I managed to cook a home cooked meal on our antiquated gas stove propped up on our wood trailer. In any case, it just tastes better.
Our main meal this time around was a camping favourite, Tomato & Rosemary Chicken. That is one dish that I consider my go to fancy dinner for camping. If I do say so myself, this time the dish outdid it self. Served with fried potatoes, steamed broccoli and a glass of chilled white. It was the perfect ending to, ummmm, a not so perfect day.

So, what about this dressing.
This dressing was just served straight over some chopped vegetables and it was delicious. In case you are wondering what's going on in that bowl, it's quite basic. There was a cucumber, two tomatoes, red onion and black olives. I am pretty sure that was it, then I just poured over the dressing and served it straight away. I could have eaten all of it easily!
And dare I say, you could even take it camping.
Creamy Greek Yoghurt Dressing
Makes 1 Cup/240 ml serving / Prep time: 10 minutes / Cook time: None
1 Cup/240 ml Greek yoghurt
1/4 Cup/60 ml olive oil
Juice of half a lemon
2 Tablespoons white wine vinegar
2 Tablespoon parmesan cheese, finely grated
3 Garlic cloves, crushed
1 Tablespoon white sugar
1/2 Teaspoon salt
1/2 Teaspoon fresh ground black pepper
In a medium bowl combine the yoghurt, olive oil, lemon juice and vinegar. Whisk to combine. Add the garlic, sugar, salt, and pepper. Stir to combine. Stir in parmesan cheese until combined. Store in and glass jar and refrigerate until read to use. Shake before use.
