The first time I ever had this dessert, I was so impressed. I remember thinking just how difficult it must be to pull off. Well, I was completely wrong. As it is possibly one of the easiest and most impressive desserts you can make. There are different ways of making them. Some folks like to make a chocolate fondant ball and place it in the middle of the batter, but this really isn't necessary. This method works really well and it turns out with a light sponge layer on the outside and a very melt in your mouth chocolate centre.
Chocolate Molten Lava Cakes
Makes 4 Individual Cakes
1/2 Cup/114 grams of butter
3/4 Cup/90 grams of dark chocolate, broken into small pieces
2 Large eggs
1 Teaspoon vanilla extract
1/2 Cup/100 grams of soft brown sugar
2 Tablespoons of flour
Icing Sugar, for dusting
Whipped Cream, for serving
Preheat oven to 400 degrees F. Grease 4 ramekin dishes and lightly dust with powdered sugar. Set aside.
In a saucepan set over another saucepan of simmering water, add the butter and chocolate. Stir gently until melted. Remove from heat and leave to cool.
In the bowl of your electric mixer, add the eggs, vanilla, sugar and flour. Mix on high speed until pale and fluffy. About 3 minutes.
Stir in the chocolate until combined well.
Next, evenly pour the mixture into the prepared dishes. Put these on a large baking tray. You don't want to bake these too long. Let's say about 12-15 minutes. They should be risen and set on the outside but liquid on the inside.
Remove from oven and place on a wire rack for just a minute or so. Serve them, by inverting each of them onto an individual serving plate. Dust with powdered sugar and serve with whipped cream on the side.
Must be served immediately.
