A simple, basic, no frills wrap. Is it under 30 minutes? Why yes it is indeed! Something tells me I am going to absolutely love working on the Meals in 30 Minutes section of this blog! Which reminds me that I am going to start it today. I was hoping yesterday to get stuck into it, but the day disappeared into night without any real start.
This salad wrap is simple enough and is so tasty and healthy as well. I was in a big rush yesterday and didn't have anything ready for lunch. So, I threw these together in no time at all and they really hit the spot. I didn't add any kind of dressing to this wrap as I thought it tasted pretty good all by itself. However, Greek yoghurt would make a really nice addition or even sour cream.
You might notice the ingredients in this wrap were used in the Mediterranean Tossed Salad a few days ago right? I pretty mush try to use up any ingredients I have in the fridge before moving on to new stuff. So, quite often many of the same ingredients get used in several recipes in a week. Then we move on to new stuff!!
Chicken Salad Wrap
Makes 4 wraps
4 Tortilla wraps
1 Chicken breast, cut into small strips
1 Avocado, peeled and cut into 2 inch pieces
2 Cups/40 grams Arugula leaves
1 Cup/150 grams cherry Tomatoes, quartered
1 Spring onion, finely chopped
3 Tablespoons olive oil
Juice of one lemon
2 Garlic cloves, crushed
1 Teaspoon cumin
In a large bowl, combine 2 tablespoons of the olive oil, lemon juice, garlic, cumin, salt and pepper. Stir and add chicken. Coat the chicken and leave a few minutes.
Lay out four tortilla wraps and add the arugula leaves, spring onions, avocado and tomatoes. Heat a large skillet over high heat and add the remaining tablespoon of olive oil. Add chicken all at once and cook over high heat until it is browned and cooked throughout, about 8 minutes. Remove from pan and top off each tortilla with the chicken. Wrap them up and serve!
