So the days are getting shorter, which means much less light at the end of the day when I am in the kitchen. For taking pictures that equates to disaster. So, I am going to have to get up to speed on taking better photos in dark lighting or else all the pictures will be like this until March! I am on it!!!
Anyway, this is comfort food at it's very best. Sometimes stodgy potatoes covered in cheese is just about all we need. Well, it suited me just fine this evening.
Cheesy Baby Roasted Potatoes
1 lb/500 grams of baby potatoes, scrubbed
1 Cup/115 grams of cheddar cheese, grated.
2-3 Spring onions, finely chopped
2 Tablespoons of butter
Small bunch of fresh chopped chives
Small bunch of fresh chopped parsley
Salt and pepper to taste
Bake the potatoes in a preheated 350 degree F oven for about 50 minutes. Remove from oven and cut each in half lengthways. Arrange them all on a baking tray, cut side up. Dab the butter evenly over the potatoes. Sprinkle with cheese, onions, herbs, salt and pepper. Return to the oven for just about 5 minutes. Serve immediately. Makes for a great snacking food with drinks.
