Possibly one of the simplest soups you will ever make! The potatoes help to add a more smooth texture to this soup. You can omit them and replace them with a few more carrots if you like . The end result will be a little more of a rough textured soup.
Carrot and Coriander Soup
In a medium pot add oil and onion. Cook for about 5-8 minutes over a medium to high heat. Then add coriander and give a good stir. Cook for about a minute then tip in the carrots and potatoes. Coat them completely with the oil mixture. Cook for a couple of minutes like this. Add all of the stock and bring to a boil. Cover and simmer for about 20 minutes or until vegetables are soft. Remove from heat and ladle it into a blender. You may need to do this in batches. Return soup to pot once it has all been blended. Keep warm. Add salt and pepper to taste and serve topped with fresh coriander leaves.
