This is such a quick side dish. By quick, I mean like 5 minutes. Also tasty and healthy.
I am one of those people that know I should be eating way more dark greens than I do, and I really try my hardest. Spinach is one of those greens that is packed full of goodness and you feel good when you eat it. However, I have to say, on it's own I would usually pass. So, I end up adding spinach to other dishes to give a boost of that goodness. Like last night's dinner for example. But today, this was lunch all on it's own and quite satisfying I have to add. Butter and sherry vinegar really do add a splash of flavour to this rather passed by spinach.
Butter Sautéed Spinach
1 lb/500 grams of fresh spinach
2 Tablespoons of butter
2 Garlic cloves, crushed
2 Tablespoons of pine nuts, toasted
1/4 Cup/25 grams of fresh grated parmesan cheese
2 Tablespoon of red sherry vinegar
Sea salt and black pepper, to taste
Heat the butter and garlic in a medium skillet for a minute. Toss in the spinach and stir around until it starts to wilt. This will happen pretty much immediately. Drizzle over the vinegar and give a good dash of salt and pepper. Give another stir and top with pine nuts and parmesan cheese. Ready for the table.
