It is a long weekend in these parts and everyone is still off school and work. I have hardly been around the house the past 4 days which means I have hardly cooked anything. Tomorrow things return to normal. Just a few weeks ahead of the Christmas festivities.
Finally, I am around the house today and had time to cook a leisurely lunch. This is an easy chicken dish that is sure to please chicken lovers. It is easy to put together and doesn't take too long. We served it with the Butter Sautéed Broccoli Carrots and mashed potatoes.
One of the many great things about chicken, it how versatile it is. I don't think there is much you can't do with a chicken. Most people like it, at least in my house. Well, in my house everyone likes chicken. This chicken dish was made up on the spot with very little expectations. It came out juicy, flavoursome and just really good. When I started at the kitchen counter, I didn't expect this chicken to make the blog. It surprised itself! I love when that happens. The complete opposite of when I have an idea for blog, do the shopping, preparation and cooking only to discover it's a disaster. That happens as well. So this dinner is filed in success.

Baked Parmesan Crusted Chicken
Serves 4 / Prep time: 10 minutes / Cook time: 30 minutes
2 Chicken breasts
2 Tablespoons olive oil
3 Tablespoons butter, melted
1 Cup/90 grams bread crumbs
1/2 Cup/50 grams fresh grated parmesan cheese
1/2 Teaspoon rosemary
Small bunch of fresh chopped parsley
Salt and pepper to taste
2 Garlic cloves, crushed
Preheat over to 375 degrees F.
Place you chicken between two sheets of parchment paper and lightly flatten it out with a wooden kitchen hammer. You can also use a rolling pin. Lightly season the chicken with salt and pepper.
Heat the olive oil in a large skillet set over high heat. Add the garlic and chicken. Quickly sear the chicken on each side for 1-2 minutes, just until it has lightly browned. Remove chicken from skillet and transfer it to an oven proof baking dish.
Combine the bread crumbs, parmesan, rosemary, parsley and a little salt & pepper. Mix with your hands. Sprinkle the bread crumb mixture evenly over the chicken and lightly pat it down. Drizzle over the butter.
Bake the chicken for about 30 minutes. Remove from oven and leave rest just a couple of minutes before serving.
